Mike Copeland: Chuy's in Waco will open Dec. 8

For the many who have asked, the new Chuy's Mexican food restaurant in Legends Crossing is scheduled to open Dec. 8, company spokeswoman Ashley Ingle said.
Leading up to that date there will be several invitation-only events at the restaurant to give employees a chance to work out kinks before the doors open to the public. Legends Crossing, by the way, is located next to the new Hillcrest Baptist Medical Center at Interstate 35 and State Highway 6.
